It is no secret that my family loves breakfast food and I often like to make something special once or twice a week for our morning school or “coffee and tea time”. Coffee cake is one of those things that is perfect for these days because it comes together so quickly.
This coffee cake recipe came as a happy accident when I was beginning to use more whole grains in baked goods. Anyway, I had made a few adjustments based on ingredients that I did or did not have in my kitchen at the time, used traditional unbleached white flour, and decided to try adding blueberries as well. The result was this delicious coffee cake that has gone viral on Instagram multiple times.

Key Ingredients in Homemade Coffee Cake
- Unbleached flour – I prefer to use unbleached flour in my baked goods, unless I’m using whole grains. I will say that einkorn flour with this recipe gives a whole different texture, but is also very delicious.
- Milk – Adds moisture to the cake. You could also use buttermilk.
- Greek Yogurt – Adds moisture to the cake and also give it lift and an incredible tender and moist crumb.
- Butter – Butter not only adds moisture, but adds flavor and helps create the tender crumb. You can also substitute cococunt oil here.

- Eggs – Holds things together in this recipe. If you’re cutting the recipe in half, use two eggs.
- Baking soda and baking powder – The leavening in this recipe.
- Blueberries – I prefer to use frozen, but fresh would work also!
How to Make Blueberry crumb Coffee Cake
- Combine the wet ingredients: You’ll want to start by melting your butter and then mixing it with the milk, yogurt, vanilla, eggs, and honey.
- Mix the dry ingredients together: in a mixing bowl combine the flour, baking powder and baking soda, salt.
- Combine wet and dry ingredients in the mixing bowl and then pour into prepared pan.
- Mix the crumb topping ingredients together and sprinkle over the batter.

- There’s no coffee in the recipe. I thought this was a coffee cake? Coffee cake recipes do sometimes have coffee in them, but not always. They are generally referred to as coffee cake because they are served alongside a cup of coffee.
- Can I use frozen blueberries? Of course! Fresh or frozen works, but I actually prefer frozen blueberries as they tend to hold their shape better.
- What makes a coffee cake moist? In this recipe, it’s the butter (fat) and greek yogurt that help create a moist, buttery cake.
- Can I make this ahead of time? Absolutely. You can assemble the night before and bake just before serving or just bake and serve at a later time. It also freezes well.
How to store and freeze coffee cake
Left over coffee cake should be covered and kept in an airtight container at room temperature for 3-4 days. Much longer than that and it will begin to dry out. If freezing, wrap securely in plastic wrap or place in a zip loc bag. Thaw at room temperature or in an oven preheated to 300 degrees.

Method
- In a mixing bowl, combine eggs, milk, yogurt, vanilla, honey and melted butter and stir.
- Fold in baking soda, baking powder, salt, and flour, and stir just until combined.
- Spread the batter into the baking dish and sprinkle blueberries on top.
- Prepare the crumb topping by cutting the cold butter into the flour until crumbly. Add salt and cinnamon and combine well. Set aside.
- Preheat oven to 350 and grease a 9x13in baking dish.
- Sprinkle topping over the whole thing.
- Bake for 35-40 minutes or until the center is set.
