Easy and Delicious Blueberry Crumb COffee Cake

It is no secret that my family loves breakfast food and I often like to make something special once or twice a week for our morning school or “coffee and tea time”. Coffee cake is one of those things that is perfect for these days because it comes together so quickly.
This coffee cake recipe came as a happy accident when I was beginning to use more whole grains in baked goods. This einkorn cookbook was given to me as a Christmas gift and I quickly made the einkorn coffee cake recipes, which was so good. Highly recommend the book if you want to learn to use einkorn in the kitchen.
Anyway, I had made a few adjustments based on ingredients that I did or did not have in my kitchen at the time, used traditional unbleached white flour, and decided to try adding blueberries as well. The result was this delicious coffee cake that has gone viral on Instagram multiple times.

“There is no coffee in this recipe, I thought it was coffee cake??”
Many coffee cake recipes do not have coffee in them. In fact, I don’t think I have ever made a coffee cake recipe that did.
These tender and sweet cakes are called coffee cake because they often are serve alongside a cup of coffee. And in my opinion, this is the best way to eat them.
Key Ingredients
Unbleached flour – I prefer to use unbleached flour in my baked goods, unless I’m using whole grains. I will say that einkorn flour with this recipe gives a whole different texture, but is also very delicious.
Milk – Adds moisture to the cake. You could also use buttermilk.
Greek Yogurt – Adds moisture to the cake and also give it lift and an incredible tender and moist crumb.
Butter – Butter not only adds moisture, but adds flavor and helps create the tender crumb.
Honey – Honey is my natural sweetener of choice for baked goods and it works perfectly here. Read this post for more about substituting natural sweeteners in recipes and why I switched.
Eggs – Holds things together in this recipe. If you’re cutting the recipe in half, use two eggs.
Baking soda and baking powder – The leavening in this recipe.
Blueberries – I prefer to use frozen, but fresh would work also!
How to Make the Coffee Cake
Combine the wet ingredients: You’ll want to start by melting your butter and then mixing it with the milk, yogurt, vanilla, eggs, and honey.
Mix the dry ingredients together: in a mixing bowl combine the flour, baking powder and baking soda, salt.
Combine wet and dry ingredients in the mixing bowl and then pour into prepared pan.
Mix the crumb topping ingredients together and sprinkle over the batter.

Coffee cake is great served in so many ways, here’s some ideas:
- Alongside a cup of coffee for a mid-morning treat
- For brunch with bacon and cottage cheese scrambled eggs

Blueberry Coffee Cake
Ingredients
- 3 eggs
- 1/2 cup milk
- 1/2 cup greek yogurt
- 1/2 tsp vanilla
- 1/2 cup honey
- 10 TB butter, melted
- 1 tsp salt
- 1/2 tsp baking soda
- 2 tsp baking powder
- 2-1/2 cups flour
- 1/2 cup blueberries
Topping
- 6 TB butter
- 1 tsp cinnamon
- 1 cup brown or coconut sugar
Instructions
- In a mixing bowl, add honey and melted butter and stir.
- Add the yogurt, eggs, milk, and vanilla, stir again.
- Fold in baking soda, baking powder, salt, and flour, and stir just until combined.
- Prepare the crumb topping by cutting the cold butter into the flour until crumbly.
- Add salt and cinnamon and combine well. Set aside.
- Preheat oven to 350 and grease a 9x13in baking dish.
- Spread the batter into the baking dish and sprinkle blueberries on top.
- Sprinkle topping over the whole thing.
- Bake for 35-40 minutes or until the center is set.
