Simple Make Ahead Breakfast Recipes
While we all love to serve our family warm and nourishing breakfasts, the reality is that it is just really difficult on some mornings. We all have busy lives and, more mornings than not, we are scrambling to get breakfast on the table quickly.
Over the last few years, I have been enjoying finding breakfast recipes that I can make ahead and have ready to bake fresh in the morning. Better yet, recipes that can be made ahead and frozen to simply reheat in the morning.

MAKE AHEAD Breakfast Ideas
As we dive in, I want to say that I love to give my family a protein rich breakfast that will keep their bellies full longer, and provide them the necessary energy that they need for the day.
When it comes to protein, eggs are one of my favorite things, and there are so many ways to fix eggs. You can easily add cottage cheese for an extra boost of protein in any egg dish and it also makes the eggs extra light and fluffy.
EGG DISHES
This ham and broccoli egg bake is a crowd favorite, and could be baked ahead and kept the refrigerator to reheat for busy mornings.
You could also make it an individual egg bites using these silicone muffin liners. Simply bake, cool, and pop out of the liners and keep in the refrigerator or freezer until you are ready to serve them. They freeze well and make a great on-the-go or busy morning breakfast.
The beauty of egg bites like these are there are endless combinations. You could use sausage or bacon, red pepper, or simply egg and cheese.
BREAKFAST SANDWICHES
Easy breakfast sandwiches like breakfast burritos or an egg on an English muffin are great to make ahead and warm up for a quick breakfast. These items are great to prep in bulk and freeze for quick mornings. Experiment with different meats, cheeses, and other toppings for variety.
SWEET BLUEBERRY BREAKFAST
Another protein rich breakfast that has a lot of eggs is this blueberry breakfast bake. It is similar to a Dutch baby or sheet pan, pancake. It is full of eggs and milk with a little flour and some warm spices. You can add blueberries or apple slices or any fruit that you desire for a extra little touch. We love to serve it with maple syrup and butter.

MUFFINS
Muffins are a simple, delicious breakfast that can accompany eggs or stand alone as a quick breakfast or snack. Often I will add protein powder and use fresh mild flour to my muffins for extra protein, especially if they are the only thing we are eating for breakfast.
My favorite muffins are these zucchini muffins and these blueberry muffins. Both of them come together quickly and freeze well for a delightful addition to another breakfast item or as a standalone breakfast.
OATMEAL BAKES
My family is not big into oatmeal, but I love oatmeal bakes for a quick, budget friendly make ahead breakfast. This lemon and blueberry oatmeal bake is absolutely delicious or this Amish baked oatmeal is good too.
SWEET CASSEROLES
French toast bakes are another easy make ahead breakfast and you can play with the flavor and toppings for variety. A classic cinnamon French toast like this one or use cranberries or blueberries similar to this one.
SAVORY BISCUITS
These sausage egg biscuits are a delightful twist on a biscuit. Full of sausage and cheese they are protein rich and super easy to transport and take on the go. They also freeze well and can be reheated in the oven or a crockpot for an easy breakfast.
COLD BREAKFAST
Another super simple breakfast idea is Greek yogurt plus granola. This is easy to take on-the-go and you could even make it up in individual glass or disposable parfait style cups for the week or several days before hand. Just keep the granola separate to keep it from getting soggy.
Granola and milk is another favorite in our house. I like to make up a big batch of granola and have it on hand for snacks, yogurt, and cold cereal.

How to reheat BREAKFAST FOODS
We got rid of our microwave earlier this year and I can honestly say I have not missed it one little bit. I should write a blog post about some of the things I have learned from not having a microwave, but I will just say that I have found some simple ways to reheat things and have not missed it at all.
As a general rule, my favorite way to reheat items is to put them in a cold oven and turn it on to preheat. By the time the oven reaches temperature your items should be warmed through. If items were frozen, it might require a couple extra minutes.
Things like muffins can be set on the counter to thaw the night before and then either eat at room temperature, if so desired, or pop them into the oven for a couple of minutes to warm.
Of course there is always the microwave and you’ll want to follow the instructions of your unit, but generally 30-45 seconds on medium heat is a good starting place. Add more time as needed until your breakfast is hot.
