Easy Protein Packed Cottage Cheese Scrambled Eggs
I get questions all of the time about how I make my cottage cheese scrambled eggs so I thought I’d write up a blog post about it.
Protein is so important for all of us, but especially for women. I’ve been on a mission for awhile to increase my daily protein intake, starting with 25-30g of protein at breakfast.
While protein throughout the day is important, I have found that starting my daily with enough protein keeps me full throughout the day, curbs cravings and desires to snack, gives me sustained energy, and helps me to feel more balanced.

Eggs as a protein source
Eggs are one of my favorite breakfast foods. They are packed with vitamins and nutrients, and with 6g of protein in each egg, they are an amazing way to get a powerful punch of protein in at breakfast.
One of the wonderful things about eggs is how incredibly versatile they are and how many different ways they can be cooked. From egg casseroles with meat and veggies to dutch baby pancakes, to fried or scrambled eggs, there are so many wonderful ways to enjoy eating eggs.
I cannot even remember where I first learned about putting cottage cheese in eggs, and I’ll admit, it does sound a bit strange.
The result of adding cottage cheese to your eggs, however, is an incredibly light and fluffy egg with cheesy flavor.
In addition to scrumptious cheesy scrambled eggs, adding cottage cheese to your eggs also gives them a punch of protein. Most cottage cheese has about 13g of protein in 1/2 a cup, so depending on how many eggs you are making, you can easily add 6-13g of protein to your eggs.
Usually when I make scrambled eggs, I add about 1/4 cup to 2-3 eggs. This means that just the eggs contain about 18g of protein. Add some additional cheddar on top and maybe some sausage on the side, and it’s an easy 30g+ of protein for breakfast.
How to make cottage cheese scrambled eggs
Making cottage cheese scrambled eggs really is simple. Crack your eggs into a small mixing bowl or measuring cup.
If you like to add any additional milk or cream, do that now. Add the cottage cheese and mix it all together very well.
Preheat a skillet over medium heat. I prefer to use cast iron and have found that if it is seasoned well, I have very little trouble with my eggs sticking.

At this point, I will typically add a little bacon grease or butter to my skilled and allow it to melt. Pour in the scrambled egg mixture and continue to cook as your would regular scrambled eggs, slowly stirring the eggs as they cook.
Once eggs are cooked to desired texture and consistency, remove from heat. Add shredded cheese, if desired and serve immediately.
