Pumpkin Spice Pancakes
Our family has a tradition of doing pancakes or waffles on Saturday mornings, and it is such a special way to welcome in the weekend.
Pumpkin spice pancakes are such a fun treat and a delicious spin on a breakfast favorite. This recipe is so simple and comes together with just a few basic ingredients. With canned pumpkin and warm spices, it has all the best flavors of fall.
What are the ingredients in pumpkin spice pancakes?
Eggs – Add protein and hold this recipe together.
Milk – Milk is the liquid in this recipe. You could also use whey or even water, but milk will add a richness to the flavor. Use whatever kind of milk you normally would use.
Baking soda – Gives a little lift to pancakes and makes them light and fluffy.
Pumpkin – Use pumpkin purée rather than pumpkin pie filling. Here’s how I make my own with a fresh pumpkin.
Pumpkin pie spice – If you’ve never made your own, I highly recommend it as it is much more cost-effective and you likely already have the spices in your pantry. You can find my recipe in my staples from scratch guide here.
Maple syrup – Using maple syrup in this recipe just adds a little more of that lovely fall flavor. You could also use honey, coconut, sugar, or regular white sugar. More about how to substitute for refined sugars in this blog post.
Flour – I actually prefer to use einkorn or whole wheat flour in this recipe, but all purpose flour works as well. You could easily make the pancakes gluten-free by substituting a gluten gluten-free flour as you normally would.

Variations and Add-Ins
- Sprinkle some chocolate chips in for a little bit of sweetness
- Top with whipped cream and chopped pecans
- Add stewed apples or peaches to the top with whip cream for an extra special treat
How to store pumpkin spice pancakes
If you have leftover pancakes, let them cool completely, and then freeze them in an airtight Ziploc bag. You can thaw at room temperature or place the sheet in a cool oven, preheat it and they will be the perfect temperature. Pancakes tend to have a little more crisp to them than fresh, but they are still delicious.
How to make pumpkin spice pancakes
Combine your wet ingredients; eggs, milk, pumpkin, and maple syrup. Add baking soda, salt, and pumpkin spice and mix well. Then add in the flour, stirring just until combined.
You’ll want to preheat the cast iron skillet and drop in a teaspoon or so of coconut oil. Pour 1/3 cup of batter onto hot skillet and allow to cook until small bubbles appear on top. Gently flip and allow to cook an additional 2-3 minutes.
Remove from heat and serve immediately with butter and warm maple syrup.

Pumpkin Spice Pancakes
Ingredients
- 2 eggs
- 1 cup milk
- 1/2 cup pumpkin
- 1 tsp baking soda
- 1/2 tsp salt
- 2 tsp pumpkin pie spice
- 1 TB maple syrup
- 1.5 cups flour
Instructions
- Preheat cast iron skillet over medium heat.
- In a large mixing bowl or measuring cup, combine eggs, milk, pumpkin, and maple syrup and stir well.
- Add salt, baing soda, and pumpkin pie spice and stir.
- Slowly pour in flour, stirring just until combined.
- Drop a spoonful of coconut oil onto hot skillet and swirl to cover the pan.
- Pour batter out onto prepared skillet, about 1/3 cup per each pancake or to desired size.
- Cook until small bubbles form and pancakes are lightly golden, flip gently.
- Continue to cook an additional 2-3 minutes or until light brown.
- Remove to a plate and serve immediately with butter and maple syrup.
