The Best Blueberry Crumb Coffee Cake

This blueberry crumb coffee cake is soft, buttery, and packed with juicy blueberries and a sweet crumb topping.

Ingredients
  

  • 3 eggs
  • 1/2 cup milk
  • 1/2 cup greek yogurt
  • 1/2 tsp vanilla
  • 1/2 cup honey
  • 10 TB butter, melted
  • 1 tsp salt
  • 1/2 tsp baking soda
  • 2 tsp baking powder
  • 2-1/2 cups flour
  • 1 cup blueberries
Topping
  • 6 TB butter
  • 1 tsp cinnamon
  • 1/4 tsp salt
  • 1/4 cup brown or coconut sugar
  • 3/4 cups flour

Method
 

  1. In a mixing bowl, combine eggs, milk, yogurt, vanilla, honey and melted butter and stir.
  2. Fold in baking soda, baking powder, salt, and flour, and stir just until combined.
  3. Spread the batter into the baking dish and sprinkle blueberries on top.
  4. Prepare the crumb topping by cutting the cold butter into the flour until crumbly. Add salt and cinnamon and combine well. Set aside.
  5. Preheat oven to 350 and grease a 9x13in baking dish.
  6. Sprinkle topping over the whole thing.
  7. Bake for 35-40 minutes or until the center is set.
