Perfect for all those summer cucumbers coming in the garden, creamy cucumber salad is an easy summer side salad.

I don’t know about you, but this time of year we have cucumbers coming on in the garden, the farmer’s markets are prolific with them, and they are even on sale in the grocery store. We like to eat them plain with ranch dip, make refrigerator bread and butter pickles, and of course, make cucumber salads.

This creamy cucumber salad is easy to whip up and is delicious served with grilled chicken, hamburgers, and so many more things.

What do I need to make creamy cucumber salad?

Cucumbers – Cucumbers are often found in abundance in the summer in local gardens and farmers markets.

Red onion – Onion gives a little extra pop of flavor to this salad. You can easily leave them out if you don’t care or onions or don’t have any.

Mayonnaise – The base of the dressing for this salad. Make your own or use your favorite brand.

Apple cider vinegar – Adds a little tang to the salad.

Honey – Helps to cut the vinegar and adds just a touch of sweet.

Garlic – Garlic adds flavor.

Dill – The star of the show, this salad would not be the same without the dill.

Salt – Adds flavor. I prefer to use Redmond Real Salt

Storage

For the crunchiest cucumbers, this salad is really best eaten within a few hours of making it. However, if you do have leftovers, store them in the refrigerator in an airtight container. Eat within 2-3 days or the cucumbers will begin to get watery.

Creamy Cucumber Salad

Perfect for all those summer cucumbers coming in the garden, creamy cucumber salad is an easy summer side salad.

Equipment

  • 2 cucumbers, sliced
  • 1/2 large red onion, sliced
  • 1/2 cup mayo
  • 1 tsp apple cider vinegar
  • 3 garlic cloves, minced
  • 2 tsp dill weed
  • 1 tsp honey
  • 1 tsp pepper

Instructions
 

  • Wash cucumbers, peel if desired. Sliced thinly and add to medium bowl.
  • Add sliced red onion.
  • In a small bowl, mix mayo and remaining ingredients.
  • Pour over cucumber and onions and gently fold together.
  • Let sit in fridge at least one hour prior to serving.
