Easy Game Day Queso (without the yucky ingredients)
Queso is a perfect game day snack or appetizer for a party, or quick weeknight meal. Anytime really. We have not bought queso in the store for a long time simply because there are so many unnecessary ingredients that I prefer to avoid in our home.
This simple queso has all the flavors and creaminess of store bought queso without all the yuck.
Ingredients for Easy Queso
Cheese – Of course you can’t have queso without cheese. I like to use a sharp cheddar, as that is typically what I have on hand. A pepper jack cheese would also be wondeful. Be sure to use freshly grated cheese for optimal creaminess.
Salsa – Use your favorite here. It works with homemade salsa, chunky, hot or mild, really whatever you have on hand. I generally use a home made fermented salsa or the organic brand from Aldi.
Whole milk – Just a little milk to thin out the sauce.
Butter – A small amount of butter to make a roux, this helps the sauce hold together and is creamier.
Flour – I use unbleached all purpose, but whatever you usually use is will work fine.
How to make Easy Queso
You’ll start by melting the butter in a small sauce pan. Then add in the flour and whisk until the lumps are gone. Slowly add in milk, one table spoon at a time, being sure to whisk constantly to prevent lumps from forming. This is your roux. Add in salsa and cheddar cheese. Continue to stir over medium heat until cheese melts and sauce is heated through.
How to store and reheat queso
Leftover queso should be stored in an airtight glass container in the refrigerator. Stores 3-4 days. Reheat in the microwave or on the stove top, adding a little milk if necessary to think to desired consistency.

Game Day Queso
Ingredients
- 1 TB butter
- 1 TB flour
- 1/4-1/2 cup salsa whatever kind you prefer
- 1/4 cup whole milk
- 1 cup shredded cheddar cheese pepper jack would be delish too
Instructions
- In a small saucepan, melt butter over medium heat.
- Add flour and whisk until smooth.
- Gradually add 2-3 tablespoons of milk and whisk until smooth.
- Stir in salsa ad cheddar cheese.
- Continue to stir over medium heat until cheese is melted and queso is heated through.
- Serve with tortilla chips.
