Vegetable Fried Rice

Packed full of veggies and super budget friendly, this fried rice whips up quickly and easily for a quick weeknight meal.

Ingredients
  

  • 1 TB olive oil
  • 2 cups cooked rice
  • 1/2 cup carrots, diced
  • 1/4 cup onion, diced
  • 1/2 cup peas
  • 2 garlic cloves, crushed
  • 1/4 tsp ginger
  • 2 eggs, scrambled
  • 2-3 TB soy sauce

Method
 

  1. Heat olive oil in a heavy skillet.
  2. Add carrots, peas, and onion and sautee until soft.
  3. Stir in garlic and ginger and cook for 1-2 more minutes.
  4. Add rice and soy sauce, stirring to coat the rice.
  5. Make a well in the center of the rice and pour in the eggs. Gently stir the eggs as they begin to cook.
  6. Continue to stir the rice and cook it until heated through, eggs are cooked, and rice beings to brown and crisp.
  7. Season with salt and pepper to taste.
  8. Serve immediately.
