Easy Zucchini Frittata

This easy, cheese zucchini frittata is the perfect way to use up all that extra zucchini this time of year.

Ingredients
  

  • 8 eggs
  • 1/2 cup cottage cheese
  • 1.5 cups zucchini, shredded (fresh or frozen)
  • 1 cup cheddar cheeese
  • 1 tsp onion powder
  • 1/2 tsp salt
  • 1/4 tsp black pepper

Method
 

  1. Preheat oven to 375 and drizzle olive oil into a 10inch cast iron skillet or a 9x13 glass baking dish.
  2. In a large mixing bowl, combine eggs and cottage cheese and whisk until well combined.
  3. Stir in shredded zucchini and spices and stir well.
  4. Pour egg mixture into prepared baking dish.
  5. Top with shredded cheese.
  6. Bake for 30 minutes or until eggs are set.
  7. Garnish with fresh tomatoes and basil, if desired, and serve immediately.
