Method
- Preheat oven to 375 and drizzle olive oil into a 10inch cast iron skillet or a 9x13 glass baking dish.
- In a large mixing bowl, combine eggs and cottage cheese and whisk until well combined.
- Stir in shredded zucchini and spices and stir well.
- Pour egg mixture into prepared baking dish.
- Top with shredded cheese.
- Bake for 30 minutes or until eggs are set.
- Garnish with fresh tomatoes and basil, if desired, and serve immediately.
