Bakery-Style Blueberry Muffins

A delicious moist, soft muffins with a sweet crumbly topping.
Servings: 8 muffins
Course: Breakfast

Ingredients
  

  • 1.5 cups flour
  • 3/4 cups sugar
  • 1/2 tsp salt
  • 2 tsp baking powder
  • 1/3 cups oil
  • 1 egg
  • 1/3 cup milk
  • 1 cup blueberries
CRUMB Topping
  • 1/2 cup sugar
  • 1/3 cup flour
  • 1/4 cup butter
  • 1.5 tsp cinnamon

Method
 

  1. Preheat oven to 400 degrees. Grease muffins cups or line with muffin liners.
  2. Combine flour, suggar, salt, and baking powder. Place vegetable oil into a one-cup measuring cup. Add the egg and enough milk to fill the cup. Mix this with flour mixture. Fold in blueberries. Fill muffin cups 2/3 full.
  3. To make crumb topping: Mix together flour, sugar, cinnamon and butter. Mix with a fork and sprinkle over muffins before baking.
  4. Bake for 20-25 minutes or until toothpick inserted in the center comes out clean. Freezes well.
