Method
- Combine wet ingredients. In a large bowl beat the butter and sugar together until light and fluffy. Add the egg and vanilla and mix well.
- Add dry ingredients. Mix in flour baking powder, and salt until a soft dough forms. The dough should be smooth and easy handle.
- Shape and chill the dough. Form the dough into a disk and wrap tightly in plastic wrap. Chill for 30 minutes up to 3 days. This makes it slightly easier to roll and cut out shapes.
- Roll and cut. Lightly dust the counter with flour and roll the dough out until it is about 1/4 inch thick. Cut into desired shapes and place on parchment lined baking sheet.
- Bake cookies. Preheat oven to 350 degrees for 8-10 minutes, just until the edges are set. Being careful not to over bake.
- Let cool completely before frosting.
Frosting
- Beat the butter with electric mixer until fluffy.
- Add vanilla, stir.
- Add powdered sugar one cup at a time until smooth.
- Add milk and beat until light and fluffy.
