Blueberry Breakfast Bake

Packed full of protein, but delightfully sweet, this breakfast bake will be a favorite in your home.

Ingredients
  

  • 8 eggs
  • 1 cup milk
  • 1.5 cups flour
  • 1/2 tsp salt
  • 1/2 tsp baking soda
  • 1 tsp nutmeg
  • blueberries, apple slices, or other fruit.

Method
 

  1. Preheat oven to 375 degrees.
  2. Spray 9x9 in baking dish with non-stick cooking spray.
  3. Whisk together eggs and milk.
  4. Add baking soda, salt, and nutmeg and mix well.
  5. Stir in flour.
  6. Pour into greased pan.
  7. Gently lay fruit across the top.
  8. Bake for 25-30 minutes or until the center is set.
  9. Serve hot with butter and maple syrup.
