Method
- Preheat oven to 425.
- Combine applesauce, eggs, oil, and honey in bowl and mix well.
- Add nutmeg, cinnamon, salt, baking soda, and baking powder and stir.
- Slowly add in flour and stir just until combined.
- Divide equally into 12 muffin cups.
- Prepare crumb topping.
Crumb Topping
- Melt butter.
- Stir in cinnamon, sugar, and flour, and stir well.
- Sprinkle onto muffins in prepared tin.
- Bake at 425 for 7 minutes.
- Reduce oven temperature to 350 and bake an additional 12-14 minutes or until toothpick inserted into the center comes out clean.
- Transfer to wire wrack to cool. Freezes well.
