With the prices of groceries steadily increasing, I am always looking for ways to simplify our meal plans and save a little money. I try to make a few meatless meals each week, but getting adequate protein in our diets is important to me. Beans are such a great way to get protein in your diet and they are cheap and store well.

I have been on a mission to create a beans and rice recipe that is so delicious you won’t even miss the meat. Enter this red beans and rice recipe. It is bursting with flavor, easy to make, and even your toddlers will love it.

Serve with a cold vegetable or apple slices and you have a complete meal!

One Pot Red Beans and Rice

Ingredients
  

  • 2 slices bacon cut into small pieces
  • 1 onion diced
  • 1 tsp salt
  • 1/2 tsp pepper
  • 3 cloves garlic minced
  • 2 cups chicken broth
  • 1 can red kidney beans
  • 1/2 can diced tomatoes
  • 1 cup rice
  • smoked paprika for garnish

Instructions
 

  • Cook bacon over medium heat until almost crisp.
  • Add onion and cook until translucent.
  • Stir in garlic and cook until fragrant, about 1 minute.
  • Add rice and cook for 2-3 minutes until it starts to brown.
  • Combine remaining ingredients and stir.
  • Bring to a simmer over medium heat and cook for 20 minutes or until rice is tender.
  • Fluff with a fork and serve immediately.
  • Garnish with Smoked paprika, if desired.
